How do I get rid of the blue text in the FrontMatter?

The text in blue when the FrontMatter.doc file is created, is text which requires you to substitute your own information. After you have replaced a blue line of text with your information, you can turn the blue off by clicking on the line and then selecting [FrontMatter]>(Change Blue text line to Black) .

How do I turn off/on the coloring in a thesis document?

In [Toolbox]>(Thesis Settings...) there are various settings for the coloring of captions and references. If you do not want a color for some setting, then select "Normal" in the coloring option.
If you have coloring in a document, but for some reason want to turn all or parts of it off (perhaps for printing), select [Files]>(Active Document)>(Document Coloring...) and select the appropriate options.
